What is Koshari?

Quick Bites on the traditional Egyptian specialty Koshari.

Koshari (also spelled "Kushari" or "Koshary") is a traditional Egyptian dish that originated in the mid-19th century. It is a comforting and hearty dish that brings together a combination of ingredients from various culinary traditions. Koshari is often considered a popular street food in Egypt and is commonly prepared at home. The dish typically consists of the following components:

  1. Rice: A base layer of cooked rice provides the foundation for the dish.

  2. Lentils: Cooked lentils are layered on top of the rice. Lentils add protein and texture to the dish.

  3. Pasta: Macaroni or short pasta is another layer in the dish. It was introduced to Egypt during the British colonial era and has become an essential koshari component.

  4. Tomato Sauce: A rich and flavorful tomato sauce is poured over the rice, lentils, and pasta. The sauce is often spiced with ingredients like garlic, cumin, and vinegar to give it a distinctive taste.

  5. Caramelized Onions: Deep-fried or caramelized onions are sprinkled on the dish, adding sweetness and crunchiness.

  6. Chickpeas: Cooked chickpeas are often included as a final layer or topping, contributing additional protein and a nutty flavor.

  7. Spices and Condiments: Koshari is typically served with various condiments and toppings, such as hot sauce, garlic sauce, and vinegar, allowing individuals to customize the flavors according to their preferences.

The unique combination of rice, lentils, pasta, tomato sauce, caramelized onions, and other ingredients results in a satisfying and flavorful dish showcasing the diverse influences of Egyptian cuisine. Koshari is enjoyed by people of all ages and backgrounds in Egypt and has also gained popularity in other parts of the world.
