This flour additive helps dough rise higher and gives baked goods a nicer texture, but it&#8217;s been classified as a possible human carcinogen for decades. It&#8217;s already banned in the European Union, Canada, China, India, and many other places&#8212;yet it&#8217;s still allowed in limited amounts here in the U.S., though the baking industry is now working toward a full phase-out by the end of 2026.</p><p>When you&#8217;re shopping, take a quick look at the ingredients list. Watch for the words &#8220;potassium bromate,&#8221; <em>&#8220;bromated flour,&#8221; or &#8220;bromated wheat flour&#8221;</em>&#8212;they&#8217;re usually tucked in near the flour description. The FDA caps it at 75 parts per million in flour, with the goal of almost none left in the finished bread, but any residue that remains is what raises concern.</p><p>The big difference comes down to how the bread performs. Bromated versions often bake up taller, with a finer crumb and better structure, which is why some commercial bakers like it for consistency. Unbromated breads rely on safer alternatives like ascorbic acid <em>(that&#8217;s just vitamin C),</em> natural enzymes, or other oxidizers that do a similar job without the health questions. Most artisan loaves, organic brands, and many big supermarket options&#8212;like those from Whole Foods, Trader Joe&#8217;s, or local Rhode Island bakeries&#8212;are already bromate-free.</p><p>For smarter choices, reach for anything labeled &#8220;unbromated,&#8221; &#8220;no bromated flour,&#8221; or simply organic. Fresh bakery breads, homemade versions with basic ingredients, or whole-grain options tend to skip it entirely. If you&#8217;re limiting ultra-processed foods anyway, you&#8217;re already on the right track.</p><p>You can easily adapt this to your routine. For sandwiches, grab whole-wheat or sourdough that&#8217;s clearly unbromated. Breakfast bagels or English muffins work great when you pick brands that advertise clean flour. And if you&#8217;re into cultural favorites, many European-style breads like ciabatta or rye naturally avoid bromate&#8212;perfect for exploring local Providence spots that focus on simple, real ingredients.</p><p>Potassium bromate is a white powder mixed into flour to speed up the maturing process and strengthen gluten. During baking, most of it breaks down into harmless potassium bromide, but if the reaction isn&#8217;t complete, tiny amounts can linger. Studies going back to the 1980s showed it caused kidney tumors, thyroid tumors, and other cancers in lab animals at high doses, which is why the International Agency for Research on Cancer lists it as &#8220;<em>possibly carcinogenic to humans.&#8221; </em>That led to the bans elsewhere and ongoing pressure here. The Environmental Working Group lists it among its top additives to avoid due to its genotoxicity and cancer concerns.</p><p>The good news? You&#8217;re already ahead by reading labels. Choosing unbromated options is an easy swap that keeps the bread on your table while dodging an unnecessary risk&#8212;especially as more brands move away from it.</p><p><em>References for
